Smoking beef short ribs is a delicious endeavor! Here’s a basic recipe you can follow:

Ingredients:
 · 4 lbs beef short ribs
 · 2 tbsp olive oil
 · Salt and pepper to taste
 · 1 tbsp garlic powder
 · 1 tbsp onion powder
 · 1 tbsp paprika
 · 1 tbsp brown sugar
 · BBQ sauce (optional, for serving)

Instructions:

1.Prepare the Ribs:

 · Trim any excess fat from the ribs, leaving a thin layer for flavor.

2.Season the Ribs:

 · Rub the ribs with olive oil, then season generously with salt, pepper, garlic powder, onion powder, paprika, and brown sugar. Ensure the ribs are evenly coated.

3.Prepare the Smoker:

 · Preheat your smoker to 225-250°F (110-120°C). Use hardwood chips like oak, hickory, or apple for smoke flavor.

4.Smoke the Ribs:

 · Place the seasoned ribs directly on the smoker grate, bone side down. Close the smoker lid and let them smoke for about 5-6 hours, or until the internal temperature reaches about 200°F (93°C) and the meat is tender.

5.Check and Maintain:

 · Every hour or so, check the smoker temperature and add more wood chips if needed to maintain a steady smoke.

6.Rest and Serve:

Once done, remove the ribs from the smoker and let them rest for about 15-20 minutes. Optionally, brush them with BBQ sauce before serving for extra flavor.

7.Serve:

Slice the ribs between the bones and serve hot. They pair wonderfully with coleslaw, cornbread, or grilled vegetables.
